Day 55: Soup & Pork Chops w/Bok Choy and Mashed Potatoes

Kept it simple for lunch, I had some canned soup and Matt had noodles and cottage cheese. I spent many hours working on the Coconut & Lime migration. So tedious.

For dinner Matt made use pork chops with mushroom-bok choy-chile crunch gravy over rutabega-potato mash. It was great! We have a some pork chops and gravy leftover and deliberately made a big batch of mashed potatoes so we finally have some leftovers. Most of the meals we’ve made the last week didn’t yield any leftovers so it’s been a lot of cooking.

I ordered a case of our favorite pretzels today from Tom Sturgis. We had been driving up to Lititz, PA to buy them at the pretzel museum about every six months but can’t see us doing that any time soon. It was $56 for 12 14-oz bags which isn’t too bad per bag. Hopefully they have good expiration dates! Matt’s been really missing pretzels.

It’s been a whole week since we grocery shopped! Time is sort of flying.

Non-food related activities:

I finished The Flatshare by Beth O’Leary. It was pretty cute! I wasn’t expecting a storyline about prison.

I’m rewatching The Good Fight on the CBS app with Matt who hasn’t seen them before. I love Elspeth. I wish there was a spin off of just her.

Matt got a Switch Lite and Animal Crossing with some birthday money so we can play together!
