Day 131: Chicken Somen & Popcorn

Produce delivery day! Some lovely basil and beets. I have to admit to being annoyed at Washington Green Grocer for including potatoes in the box in July, the month when possibly the most produce is in season at the same time in this area. The box isn’t cheap and I can get 5 lbs of potatoes for $2. I want July produce! The old owners were so nice, organized and responsive. I really miss them!

For lunch I made chilled somen with chicken I cooked in chili garlic sauce, ginger and soy and zucchini and kohlrabi. We have a lot of chicken left.

For dinner Matt made himself some noodles and cottage cheese with tomato sauce she made with some of the basil and I had popcorn.

Non-food related thoughts/activities:

We keep seeing pictures of people who say they are taking things seriously and socially distancing but taking pictures hugging clients, vacationing etc. This is why we can’t go anywhere and Maryland has been banned from traveling to New York without quarantining.

More reading. We watched Grantchester. It was good season! Lots of dark backstories for some reoccurring characters.

Day 130: Cherries & Kale

For lunch I made some mi goreng with leftover grilled chicken and the half of zucchini we had left from making the bean fritters Sunday.

For dinner Matt made pork chops with a double batch of kale wild rice pilaf. We have a big pork chop left and a ton of rice so I’m seeing some easy meals ahead.

I had some cherries after dinner. Not as sweet as I would have hoped! I might try to make something else with what I have left. They were fine in the pork dish last week but not that great out of hand.

Matt’s antibiotics were upsetting his stomach so we had some yogurt delivered along with some more pantry type items that were back in stock. It’s amazing how much food you go through when you are making every single meal.

Non-food related activities/thoughts:

It’s the hottest it’s been so far so Matt has decamped a bit to the bedroom to work. We don’t have central air conditioning and only have the bedroom unit upstairs. Downstairs we have an oddly open floor plan for a 1930s house and one air conditioner can cool the whole level pretty comfortably except in the kitchen when we are actually cooking.

I’m suspicious of how careful my parents are around my brother when he apparently visits. He has eaten outside during his visits but he’s also showing my mom stuff on his phone and seems to be doing a lot of unnecessary shopping like buying a super cheap table at IKEA. Both my parents are super high risk and already have to come in contact with people to get medicine and food and home health care workers. I don’t know why he is going into their house at all. This time he also brought a friend. It doesn’t make much sense to me. My mom needs my dad for her care and if he got sick I don’t know who they think is going to be able to take care of them. Even for my brother and his wife, I don’t know why they’d want to risk illness when they don’t have to. They work from home. They don’t have children. There is a lot out about younger adults getting a mild case and being sick for months or having permanent damage. Why risk exposing yourself or exposing other people for no good reason?

Day 129: White Bean Fritters & Grits

For lunch Matt made some zucchini-cannellini bean fritters and pocketless pita (using this recipe) and I made baba ganoush with the eggplant he grilled yesterday. I love using up things we have on hand to make something new.

For dinner he made more patties out of the pork leftover from Thursday. We had a great pork shoulder at Sylvain in NOLA years ago that was basically discs of fried pulled pork. This was a pretty good recreation and a really fun way to use up leftover country pork ribs. We had it with (bagged) salad and grits.

Not a lot of leftovers from this weekend but we used up a lot in a great way.

Non-food related activities:

Honestly, a big nap. I finished a book last night at around 3 am according to the app and Matt’s hasn’t been sleeping thanks to his ear infection. Even Lulu didn’t feel great.

I bought the new eco expansion pack for the Sims on sale so I installed that. I like to read or listen to podcasts while playing so that will be fun.

Day 128: Blueberry Pancakes & Tacos

I realized that I’m not totally sure I had ever had blueberry pancakes before. I always order a short stack because I hate to waste food and rarely can eat more than two pancakes and most places don’t offer fruit pancake as a short stack. I know I haven’t made them myself as I’ve maybe made pancakes 10 times in my life.

Matt made them using the King Arthur Flour recipe and the griddle I got over the winter and never used. So good!

For dinner he grilled chicken thighs with the last of the charcoal. I made a quick pickled cabbage/carrot/onion for the topping and made tacos. He also grilled some eggplant for tomorrow.

Non-food related activities:

Matt mowed a lot of the yard.

I have a headache so we watched a little Babylon Berlin on Netflix and switched to Father Brown on Britbox .

I don’t know where the weekend days go. I feel like we don’t do much or sleep in terribly late but it’s always like 11 pm before I know it.

Day 127: Cheetos & Oreos

Today I had a can of soup for lunch and some Cheetos. Matt had mi goreng. For dinner we reheated the chili from Wednesday. We had a ton since Matt didn’t eat any Wednesday. It was nice not to have to really cook!

We also tried some new marshmallow Oreos. The had marshmallows in the cookie part! We haven’t had much snack foods for months but I put some in one of our pantry orders. It was nice to have a treat I didn’t bake myself.

Non-food related activities:

It seems like Matt has a sinus infection (he did a telehealth appointment) so he’s on antibiotics. Hopefully that clears up soon!

We watched Babylon Berlin on Netflix. I’m enjoying season 3! I like the movie set angle.

I’m trying to get some reading done. I have a bunch of ARC, new books from the library and we are a month into the library summer reading challenge and I’m only at 18 books.

Day 126: Jajangmyeon & Corn on the Cob

For lunch Matt had turkey sandwich and I finished off the roasted turkey breast in some jajangmyeon.

I made some pork country style ribs in the slow cooker with fresh cherries, chili sauce, spices and onion and served it with mashed potatoes and corn on the cob. We have a ton of pork left.

Non-food related activities:

I have a robin in my yard that I think laid eggs in my driveway last year and stuck around. She never flies off when she sees me and frequently watches me. Today she was perched on the edge of the (dry) birdbath and I swear she made eye contact with me then jumped in the dry bird bath and jumped out without breaking eye contact. I can take a hint so I took out a pitcher of water and filled it up.

She had flown off but she mustn’t have gone far because she flew over the birdbath after I filled it and then perched on the fence watching me and Lulu until I took Lulu inside. I hope she enjoyed her bath/drink!

I finished an ARC of Impersonation by Heidi Pitlor. I liked it a lot! It was about a working class ghostwriter which isn’t a subject you read much about.

We watched We Have Aways Lived in the Castle on Prime. The house was beautiful. Crispin Glover looked good. I haven’t read the book but I feel like they made a little change at the end.

Day 125: Egg Salad & Chili

We had egg and cress sandwiches for lunch here and then I had the chili for dinner I had put in the slow cooker in the morning. I also ate the beets I prepped the other day. Matt had some turkey breast on rice because he didn’t feel well. His stomach was upset and he felt a little dizzy and congested. I wouldn’t think it could be the virus, he’s only been out twice briefly in the last month.

I did another massive shop at Aldi. It had been a full month so we were low on things and I wanted to stock up. Aldi was nearly completely out of beans and a few other items were missing. I don’t know if it has to do with the aluminum shortage or other disruptions to the food supply chain or what.

I haven’t seen this many shortages in months.

Non-food related activities:

Not much! I listened to more You’re Wrong About. We watched Cannonball (Netflix DVD) which was the worst Paul Bartel movie we’ve seen. We watched some Father Brown in Britbox. I read some more of my book.

It was an exhausting day. It was hot, shopping was stressful, I felt headachy all day thanks to the heat and not eating for hours.

I applied for a new opportunity that could be a lot of work but also a lot of fun.

Day 124: Mi Goreng w/Chicken and Squash & Shrimp and Wax Beans in Black Bean Sauce

For lunch I sautéd some golden rod squash and leftover chicken and tossed it with packets of mi goreng.

For dinner I made shrimp and wax beans in black bean sauce. It turned out a little salty so I’ll use less soy sauce next time but the black bean flavor was good.

We had some Rice Krispies treats for dessert.

I made egg salad to have for tomorrow’s lunch after I get back from the grocery store. I haven’t made it since the winter and it finished off the last of a dozen eggs but I’m assuming I’ll be able to pick some up tomorrow. We have some watercress to add to it too!

I rearranged the refrigerator to make room for groceries tomorrow. I can’t believe it’s been a whole month! I’m getting better about using up any leftovers before shopping for optimum free space. Now all we have in there is some prepped beets, cottage cheese, butter, cheddar and dozens of condiments and pickles.

Tomorrow I am going to start some chili before I leave so I won’t have to do any cooking for the rest of the day! Grocery shopping is exhausting and I have made so much food and done so much work over the last couple of days. I’m exhausted.

Tomorrow is also one of those days when it seems like everything we’ve ordered over the last few weeks is arriving at once. Long delayed Costco orders, prescriptions, contact lens supplies, new masks etc

Non-food related activities:

I am giving up on Faded Out. I can’t take it anymore. I also deleted Sticky Beak, the follow up.

I listened to an episode of You’re Wrong About which I like but so far I already knew a lot about the topics they talk about. It’s entertaining but nothing new. I think I have similar interests to the woman host.

I wrote a ton of reviews for Netgalley.

Worked on C&L a lot.

We watched another episode of Babylon Berlin and Father Brown (quite a combo!).

Day 123: Chicken, Mac and Cheese & Fish Sticks

I made our “big meal” at lunch again. I defrosted four thighs over the weekend to help with my goal of rotating food in and out of our freezer. I made what we call Grandpop fried chicken which is pan-fried chicken made like this but with a tiny bit of granulated bouillon sprinkled into the flour. My grandpop made it that way all the time and it’s so good! I tossed the leftover green beans with the leftover marinated julienned carrot and cucumber from making gimbap and added a dressing for the vegetable. I made mac and cheese with the rest of the shredded cheddar, leftover ricotta and the cooked plain pasta we had from Friday. We are out of milk but the ricotta melted well and helped coat the noodles. Lots of repurposing leftovers today!

I made Rice Krispies treats after lunch.

For our evening meal we finished off the fish sticks (highly recommend the Aldi wild caught fish sticks) with homemade tartar sauce and I had some chips and salsa and Matt had some peaches and yogurt. We already had such a filling meal in the afternoon we didn’t need much but I wanted to finish those fish sticks and get them out of the freezer.

After dinner we prepped the wax beans and the beets we had from last week’s produce box so they will be easier to use in other meals later in the week. This way they are ready for any use.

I placed an Amazon pantry order for Wednesday. There are a few items we just haven’t been able to find in person since February that they had in stock. Matt wants to take this week off of grocery shopping (I’m going Wednesday) since he did the vet visit and grocery shopped at the Italian grocery last week but we have a few things we need and Aldi doesn’t sell.

Non-food related activities:

We started season 3 of Babylon Berlin on Netflix (only one episode, I can’t wait to see what happens next!) and watched a little more Father Brown on Britbox.

I caught up on Gee, Thanks Just Bought It. Caroline is so enthusiastic about everything. It’s interesting to see a slow pivot to more sustainable shopping.

I did a lot of work on Coconut & Lime today.

I started an ARC of the new Caroline Leavitt book. I’ve been reading her books since college so I was excited to get a copy of this!

I thought a lot about how grateful I am no longer teaching and don’t have children during all this.

I organized our enclosed porch. We have very little storage space in the house. The porch isn’t insulated but it doesn’t get below freezing or as hot as the outdoors does. We use it for our recycling bins and cases of soda normally but we have a cart in there I’m now using to store some nonperishables like pasta, instant noodles, extra soy sauce, the case of sleepy time tea we ordered etc. It looks so much better now! In the colder weather I left root vegetables out there but it too hot for that now.

We have been storing yeast and cheese in the tiny mini fridge on the porch but today I noticed it was a little warm inside. I’m going to have to keep an eye on it. I don’t know if it can’t keep up with the heat (I adjusted the temperature down) or if it was left slightly open after Matt made the pizza dough or what. It isn’t essential but it is nice to have! The couple pounds of yeast and shredded cheese take up a lot of space in our regular fridge which is pretty small.

Day 122: Green Bean Salad & Pasta

I made a salad with steamed green beans instead of lettuce, smoked salmon, the end of the crumbled blue cheese, hard boiled eggs, red onion and cherry tomatoes I bought almost a month ago! It was so good! Light and refreshing and a great way to use up green beans which I don’t love.

For dinner we turned Friday’s leftovers into a baked pasta dish with leftover ricotta and mozzarella from making pizza last week.

After dinner I made dried cherry/yogurt/almond muffins for Matt’s breakfasts this week.

Non-food related activities:

A lot of reading. Watched Father Brown on Britbox. It isn’t my all time fave but it’s nice to find a show we haven’t watched before. I think we thought it was a Father Ted remake and avoided it. It’s cute but so far we know nothing about Father Brown personally. We also saw an episode with a fun nun who is apparently getting her own spin off like 9 years later.
