Day 193: Country Ham Sandwiches and Roasted Chicken

Nice but chilly weather today! We finally were able to pay a game outside. I don’t know how time gets away from us so much when we don’t really go anywhere.

The neighbors were having a get together which still seems wrong. They were mostly masked but also eating off and on.

For breakfast we had country ham—that I’ve had from pre-pandemic (!) from a job I did. Country ham keeps forever! Anyway Matt made breakfast sandwiches with it on English muffins with smoked Gouda and a fried egg.

I guess that was actually lunch.

For dinner he spatchcocked a chicken we bought at Lidl yesterday and roasted it with some baby eggplant. He also made pearl couscous with Lima beans. And chopped liver with the liver from the innards bag. So good!

We finished Counterpart. It’s a shame it doesn’t seem like there is going to be a third season.

Day 192: Noodles & Jambalaya

I broke the handle off my car door with my Hulk-like strength and rage so I got that replaced today. It was an ordeal but I got it done!

I had leftovers from yesterday for lunch and Matt had the last of the beef ribs.

For dinner he made jambalaya from a mix I got from the company a long time ago. It was actually not bad! I was skeptical but how can you go wrong with andouille and shrimp?

Day 191: Andouille and Shrimp Pasta & Fish Sticks

It was a real high-low day food-wise. I made a pasta dish as our main meal at lunch time with shrimp, okra, andouille and fresh corn. I’ve never made anything like it before but it was really good!

For dinner Matt made sticks and sticks—fish sticks and zucchini batons (roasted). Those Aldi wild caught sustainable (and cheap) fish sticks have been a real find this pandemic. They are tasty (whole pieces of fish) and crispy. Matt made homemade Old Bay tartar sauce.

We watched more of His Dark Materials and The Devil and Miss Jones both of which seemed pretty topical.

Day 189: Shrimp & Jjapaguri

I had to pick up my eyeglasses (it has been an ordeal, they finally seem okay) so I came home and quickly made some frozen shrimp. I’m always amazed at how crispy they are. It’s not much different than a shrimp basket at the sub shop.

Flowers were delivered from Matt’s work which was nice of them! My mom really like carnations so it was good to see them in the mix.

For dinner I made some beef country style ribs in the slow cooker with Korean pear, gochujang, and soy sauce. Then we made jjapaguri and added the beef to it in an homage to Parasite. How did that win best picture less than a year ago?! I also made some pattypan squash as a side.

I did a ton of work on my mom’s estate again. I really look forward to filing. It’s pretty simple; almost everything was co-owned with my dad but with Covid it’s really hard to get anyone on the phone and everything has to be done remotely. I also am having a lot of trouble figuring out how they paid for their home owners insurance and car insurance and it’s due. I can’t get them to contact me either. My mom handled it and my dad isn’t sure. There is no canceled check and it doesn’t seem like a debit card or auto payment but an electronic check?? IDK

Day 188: Chicken Tenders & Squash

For lunch we had leftover baked homemade chicken tenders (Matt had his on some leftover top-sliced hot dog rolls) and leftover braised red cabbage.

For dinner I roasted a delicata squash with some herbs de’provence and Matt made pasta with this odd cacio e pepe meal starter kit I bought at Aldi. It had the cheese, sundried tomatoes and pepper in it. All things I could buy individually but it was less than $4 and of course super simple to make. I’d buy it again.

I worked a lot on stuff for my mom’s estate.

We started His Dark Materials (Netflix dvd) and it’s pretty cute .

Day 187: Sandwiches & Chili

This morning I went to the farm stand in Kingsville, dropped off a package, bought some Coke Zero at Giant and dropped off my library books.

Then I came home and made a tomato-leftover pork chop sandwich for my lunch.

I made beef chili in the slow cooker with beans and tomatoes my dad insisted we take with us last week. Matt made cornbread with this weird buttermilk self rising cornmeal mix I bought with our Amazon Fresh delivery to bump us up to free delivery. It was good! He didn’t quite follow the suggested recipe but it turned out well.

We watched the new PBS show Van der Valk. It was pretty good.

I’m really getting through some You’re Wrong About episodes lately. Today was acid rain. I miss the days when both republicans and democrats were concerned about the environment.

Day 186: Lox & Chicken Tenders

Our eating habits have changed a bit due to the pandemic. No take out and no eating in restaurants has meant an increase in simpler food. Plus the stress of my mother’s declining health and then death really has put a damper on cooking the last month. And puppy training! Oy! I feel like I never get a moment’s peace.

We’ve been eating more mi goreng or other non-fried instant noodles, more smoked salmon, more chicken breast (baked tenders are so easy!), more soba and more wild rice pilaf. Plus I haven’t had as much fruit or variety of produce as I usually would. The produce box hasn’t been great and the local farmers are way outside of the city.

For brunch we had smoked salmon with cream cheese on leftover bread from Costco and hard boiled eggs.

For dinner Matt made wild rice pilaf with spinach and baked homemade chicken tenders.

We watched The Long Goodbye on Prime.

Day 185: Noodles & Braised Cabbage

For lunch I had the leftover pork country ribs and zucchini tossed with some Tainan style noodles. Matt had regular noodles and cottage cheese. Our instant noodle consumption really has increased during quarantine! It is a good way to use up some odd bits of leftovers. I try to get the non-fried, lower sodium ones.

For dinner Matt baked some pork chops, braised some red cabbage and apples and made baked potatoes.

Matt planted some saffron bulbs! We think we might have already had some in the yard but now we have official ones. It’s possible they might even bloom this year! The shipment took longer than it was supposed to for various Fedex related reasons so I’m not sure if they got in the ground in time.

I love growing things that are expensive to buy in the store! We haven’t had much of a harvest of anything this year, it’s been very rainy and windy. The beach plums all split on the bush, the apples and pawpaws disappeared off the trees. Honestly, I don’t have too much energy to do anything with it anyway.

Today I stepped on a shard of plastic on the porch. I don’t think it was too deep but one more thing to worry about. I think it must have been from when we had to repack the recycling to take it in ourselves since recycling is on hiatus here.

We watched There Are No Fakes on Prime. What a bizarre story.

I read André Leon Talley’s memoir.

I’m looking forward to getting my mom’s estate moving forward. My dad asked me to help him with the day to day expenses for him which I don’t mind but it’s a lot of work on top of the estate stuff too. It’s a little overwhelming.
