Day 264: Lamb & Potatoes

We didn’t have enough leftovers for both of us so Matt had the leftover pork and wild rice and I had a can of minestrone soup. My tip: add a tiny wedge of cheddar to the bottom of your bowl. You will thank me later.

In the afternoon I roasted a seriously old spaghetti squash. It was fine but I swear I bought it in March. I then let it cool and heated it up for dinner.

The rest of dinner was great! I made the perfect lamb roast and some lemon-thyme smashed potatoes. I don’t think I’ve made better lamb before. I have to write these recipes up!

I’ve been working on the blog while watching Insecure with our HBO trial. I hate that I am behind because now I have no one to talk about Molly to.

We kept watching The Undoing. Why is Kidman playing it so cold? I feel like we know nothing about her.

Day 262: Pancakes & Pork Chops

For brunch we finally made some legit fluffy pancakes! We also made some homemade chicken breakfast sausage. It was a good use of ground chicken! Ground chicken always has good expiration dates and is very affordable so I tend to get it when they have it but it requires some work to be tasty. Finding something to make with it that doesn’t require flatbread or rolls is always a bonus.

For dinner we had pork chops, broccoli and wild rice pilaf.

We signed up for a free trial of HBO Max and have been plowing through Lovecraft Country. The fake blood budget must have been astronomical.

Day 261: Schnitzel Sandwiches & Crispelle Lasagna

For lunch we had sandwiches with the leftover schnitzel and Thanksgiving chips.

We had leftover “lasagna” and salads with arugula, cherry tomatoes (I bought in October??), beets, blue cheese, cucumbers and red onion.

The crispelle lasagna was a great idea, it made a really reasonable about for two people.

We watched GBBO and Fisherman’s Friend on Netflix. The movie was a little cheesy but the singing was good.

Day 260: Thanksgiving

For lunch we had trout salad on marble rye and “Thanksgiving” flavored chips.

For dinner Matt made a tuna and potato appetizer (with caper-anchovy mayo) and a crispelle “lasagna” with sopressata and ricotta from the Marcella Hazan cookbook. Very good!! I’m glad we had a crepe pan.

It was nice doing something else during the actual day! My dad had what I made on Sunday so everyone was happy.

We started the French Agatha Christie “prequel” on Mhz. We had been putting it off because it was based on Hercule Poirot’s Christmas and we assumed it was Christmas related but it wasn’t! The story seems about the same but about a birthday.

Day 259: Schnitzel & Fried Smoked Oyster Rice Dressing

I ran to the post office in the morning then came home and made a quick fried rice when the leftover oyster rice dressing and turkey.

For dinner Matt made schnitzel, heated up the leftover mashed potatoes and made some Swiss chard and mushrooms. The thin pork chops were sell by Friday so we had to get them done! We also cooked up the steelhead trout which also was sell by Friday. We will make trout salad for our lunch tomorrow.

We watched Good Morning Vietnam on Netflix DVD. I hadn’t seen it before.

Day 258: Turkey Empanadas

For lunch I made chipotle turkey acorn squash empanadas with leftover turkey. Highly recommend!

For dinner we had some mortadella sandwiches. Matt made a run to the Italian store for Thanksgiving supplies and got the ingredients.

I spent a long time at the bank doing paperwork. It was all though the drive thru so I’m glad it wasn’t very cold!

We caught up on Death in Paradise and Fargo.

Day 257: More Turkey

For lunch I heated up leftover chicken from Saturday and the cauliflower from Sunday and mixed it in some mi goreng. It turned out great!

I spend most of the day on the phone with various people about my mom’s estate so we just had turkey sandwiches for dinner.

In the morning I went to my dad’s to drop off his dinner for Thursday and he gave me my mom’s old milkshake maker.

We watched The Truman Show (Netflix dvd) and an episode of Fargo (Hulu).

Day 256: Early Thanksgiving

We had crumpets and scrambled eggs for breakfast.

Then we made apple cranberry pandowdy, turkey, stuffing balls, cauliflower, apple cranberry sauce, mashed potatoes and gravy.

We watched Suspicion on Netflix DVD. Great movie until the end. I packed up a plate (well, made a plate then deconstructed into individual Tupperware containers and jars) to take to my dad tomorrow so he can have it on Thanksgiving.
