Day 429: Take out!

For lunch I had the leftover red beans and rice with an egg.

I spent some of the afternoon in the hammock reading the new Jennifer Weiner book. She’s really churning them out lately. I think they’ve suffered. It’s not my usual genre but they were always fun summery, lighter books and now they seem rushed. Book 102 of 2021!

The mail was a mixed bag. Some vintage punch needle yarn arrived but also some thing from the registry of wills wanting some more documentation for my mom’s estate. I had hoped it was all finished! I put together what I think will satisfy them and will drop it off tomorrow.

Anyway, my plan was to make this time consuming leek fennel dish for dinner but I was so busy with the paperwork I ran out of time so Matt picked up some chicken and fries from the local sub place. I really missed fries last year! I am glad we aren’t doing too much take out any more but it is good in a pinch. We were starving and we didn’t really have anything quick to make defrosted. We already did a last minute meal yesterday.

Matt prepped the leeks and fennel today and shared them so it will be quick to make something with them tomorrow. He’s taking another vacation day so three day weekend!

I did a little more weaving while we watching Cucumber and the Winter Melon on Disney Plus. We are not huge Marvel people but I wish they had treated it more as a parenthetical work and just had it about them readjusting to every day life. The men have great chemistry but the overarching story was silly and a it was little offensive (strange?) that the wronged people were the villains? A procedural where they occasionally solve a crime or a buddy road trip movie would have been so much more fun.

I had migraine again! I blame the paperwork and going too long before eating.

Our figs are huge and it’s barely mid-May. I wonder if they will be ready to harvest early? I swear they normally aren’t this big until the summer.

Day 427: Lentil Salad with Salmon

I slept so late today! I think it was almost 10 before I got up. Last week was rough and I had so many headaches I think I just needed some sleep.

I got right up, posted the recipe for that wild rice salad I made last week and made lunch though!

For lunch I made our main meal for the day and made a one skillet meal with salmon (frozen, from Sitka Salmon shares—use my code CALFish for a discount), lentils (parboiled in a pouch from Aldi a while back), asparagus and radishes with some bread from Costco. I don’t know how that asparagus was still good, I think I bought it about 10 days ago. We ate a lot of salad mix last week because I didn’t feel well so we are well stocked with produce.

For dinner we had some more rotisserie chicken in some noodles with spinach and seaweed.

We got Disney plus again to catch up on some shows. We are watching the Falcon and whatever and the parts with them is cute but boy does it not have much of a plot! I wish they had just made a goofy road movie with the two of them instead.

Day 426: leftovers

For lunch we had leftover rotisserie chicken in some Korean ramen with extra seaweed. It reminded me of the ramen we’d get at our local Korean place that has dumplings floating in it but I can’t remember what it’s called. Googling is not helping, it’s not the kind with kimchi.

For dinner we had the Taiwanese pork leftovers. We had planned salmon and a gratin but Matt replaced our kitchen sink and we were too tired to make anything new.

I ordered more punch needle stuff. Im bidding on some vintage punch needle yarn on eBay so we will see if I win that. It’s so quick to make something fun.

Who knew eBay was still a thing?

We watched more Mare of Easttown. I was right! That’s all I have to add.

Day 422: Corned Beef

For lunch we had leftover tuna pasta salad.

I bought a corned beef back in March I think that was sell by May 11th and has been in our fridge all that time! It’s still perfectly good so I popped it in the slow cooker and we had it with salad and some German sourdough rye I bought at Lidl and some pastéis de nata for dessert. The Lidl version aren’t as great as the one we had in Belem where they were invented but they are pretty good! That’s something that I enjoy but wouldn’t want to make myself unless we were having a party with people I know would love them.

We watched a little Suburban Shootout which we had seen years ago (Ruth Wilson, Tom Ellis and Tom Hiddleston look like babies in it!) and After Hours which just got on my nerves. Netflix DVD really is great for things that aren’t streaming anywhere.

I also finished a present for a friend and mailed it off at the Wockenfuss candy story USPS spot. And bought some candy! That’s how they get you!

I taught myself punch needle today and started a piece.

I keep getting headaches. The stress and construction noise in the neighborhood is getting to me.

Day 419: Red Beans & Rice

I had some frozen shrimp for lunch with a can of tomato noodle soup. Dinner was leftover red beans and rice. I think it was actually better the second time! More creamy!

I stopped at the supermarket to pick up some soda and some odds and ends. Do you ever have a day where you drop or break everything? That was today.

We watched Mare of Easttown and The Nevers on HBO Max and I started a weaving for my friend.

Day 417: Bacon Chicken Burgers

For lunch we had some (frozen) dumplings from H Mart. One was more of a large buckwheat wrap? It was all very good.

For dinner we grilled and made bacon chicken burgers and had them with leftover cauliflower salad. We also made some meatballs with the leftover meat (they tend to heat up better than burgers) and grilled some eggplant for a future meal. The eggplant went a little too long but I think it will be okay. Hopefully! They were beautiful eggplants.

We also tried these Cuban sandwich flavored chips. Not bad!

I made a whole weaving on a new small loom I bought on Amazon for like $13. I swear it is the same one I’ve seen people on Etsy selling for $$$. It even came with a heddle bar which was nice. My other small loom didn’t and it’s hard to practice on my bigger looms with it because it takes so much more yarn and time.

We watched Bäckström on Acorn. It is really enjoyable! I don’t know why they aren’t promoting it more. It even has a non-annoying little kid!

Day 414: Leftover Pizza

For lunch I had some frozen shrimp and Matt had a tuna melt with the leftover tuna on marble rye.

It was hot today! I wanted some hammock time to catch up on my reading but time got away from me and then it was nearly 90. I had a zoom job interview in the afternoon. Of course the dogs had to bark and the office phone had to ring during it.

I prepped tomorrow’s dinner in the afternoon—lots of marinating is needed. I love when I can do meal prep on days when I don’t actually have to make dinner.

We had the leftover pizza for dinner. It was tasty but I think pepperoni and meatballs is too much! The asparagus was good though.

We watched Cruel Summer. I can’t figure out where it is going to go!

We are getting low on produce and milk so I think I might do a grocery run tomorrow. I don’t think I’m going to try to do the mega shops anymore now that I’m fully vaccinated unless something changes.

Day 412: Doughnuts

I picked up some books I requested at my (open!) library so I stopped by my favorite bakery and got doughnuts and smearcase.

I missed doughnuts so much! The woman behind the counter said it was good to see me and we talked about our vaccination.

Matt made tuna salad for lunch so we had sandwiches and chips.

For dinner we had the leftover ham (just a few bites, really), leftover collards (with parboiled wild rice mixed in) and made corn muffins.

We watched the new Murdoch on Acorn. It’s been action packed with old storylines this year. I wonder if people who they worked with before felt better about coming back during the pandemic? I know showing flashbacks must mean a lot less time on set so maybe that is it?

Day 406: leftovers

Took it easy today! I had mi goreng with cabbage and a fried egg and Matt had some soup.

For dinner we had leftover keema and potato/eggplant from Sunday.

Beautiful day! Spent time reading book number 88 for 2021 in the hammock and played ball with Mitzi for an hour.

Matt is going back to picking up his medication in person. It’s at a supermarket that we don’t love (we’ve bought spoiled meat from them several times) but they have a good dairy department and of course anything self stable is fine so it will nice to go back to picking up some things we can’t get at Aldi while he is there anyway.

Day 405: Kimchi Fried Rice

No leftover so we both had canned soup for lunch. I wish that was just a little more filling!

It was a long time until dinner. I made a whole weaving. It was warmish out but very overcast. The dogs were out of pocket all day.

For dinner Matt made kimchi fried rice with leftover rice from kimbap for dinner.

We watched the Midsomer Murders premiere and it was not good! I hope the next one is better.
