Luckily neither my husband or I are showing symptoms of Coronavirus disease (COVID-19) right now but after seeing what is happening in the rest of the world we decided to self isolate starting the afternoon of 3/13/20 to prevent hopefully either of us getting sick or spreading the disease to others. The earlier we “socially isolate” or quarantine ourselves the better chance we have to slow the spread. Things are only going to get worse from here.
You may be healthy and skate by but your parents, neighbors and friends might not be so lucky. If we can cut down on the cases now, we buy time for the hospitals to become more prepared and save more lives. I don’t want to be the reason why people die.
I thought I’d start this blog to give me something to do and track my day to day cooking. I’ve been creating recipes for my other blog since 2004 but that didn’t seem to be a good place to put this content. Coconut & Lime is strictly recipes and here I thought I’d share more of my thought process behind my every day food. It’s really not much different than how I’ve cooked and meal plan day to day for years but ramped up since going out eat and getting take out is no longer an option.
I’m hoping that this blog will help others not feel quite so isolated and inspire them to make the most of this forced time at home.
